Let’s make it.
- Combine the flour, rye flour, yeast, and 35 g coconut sugar in a large bowl.
- Make a well in the center. Add the milk, melted and cooled butter, and egg.
- Mix to form a dough.
- Knead on a clean surface for 15–20 minutes.
- Place in a bowl, cover, and let rise in a warm place for about 1½ hours.
- Roll the dough into a rectangle on a lightly floured surface.
- Spread with the pumpkin spread, leaving a 3–4 cm border along the closing edge, then sprinkle with the remaining 30 g coconut sugar.
- Roll up and cut into 6 pieces.
- Arrange in a parchment-lined baking dish, cover, and let rise for another hour.
- Heat the oven to 356°F (180°C) using conventional top and bottom heat.
- Bake for 40–50 minutes, until golden and cooked through.
- Serve warm.
